it shows that people tend to make things too straight and geometric, when they should instead be curvy and organic.

Yeah, but if you make things too curvy they no longer fit together well. And can be hard to build depending on the construction methods used.

Look at the original desire path it goes to the corner the paved path is offset 30 degrees because people want to access the crosswalk not the sidewalk then the crosswalk

Any medieval city builder that has transport networks I usually have my central hubs looking like I modeled them after a methed up Spidermans jizz after giving webslinging from his dick a try.
